I have been trying to find or come up with a good recipe for these and finally have. They taste just like carrot cake.
1-1/2 cups old-fashioned oats
2 tablespoons ground flaxseed
1/2 cup peanut butter or any nut butter
2 tablespoons Maple syrup
2 tablespoons Honey
1/2 teaspoon of vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1 pinch ground cloves
1/2 cup shredded carrots
1/3 cup shredded coconut for rolling
In a mixing bowl, add all ingredients, mixing very well until smooth.
Roll into about 1 inch balls
Serve chilled or at room temperature.
Keep remaining bites in an airtight container for up to one week in the refrigerator.
Makes 16 bites @ 75 calories each.
