{Recipe} Frittata Muffins (Repost)

Egg, bacon, and potato frittata in single serving muffin. Great to freeze and reheat for a quick on the go meal.

3 Large eggs
3 slices of bacon
1 Medium Potato
3/4 Cup Low fat Milk

Preheat oven to 350 degrees
Cook bacon. While bacon is cooking dice potato and place on cookie sheet in oven. Bake until soft or desire texture.
Dice bacon and mix with potato in bowl. Whip eggs and milk together then add to bacon and potato. Pour mixture into muffin tin, line with paper baking cups for easy clean up.
Bake at 350 degrees for 30 min or until eggs are fully cooked.

Make 6 servings / muffins at 88 calories each.
